Chorizo and Sweet Potato Pizza

So I looooooooooooooooooooooove pizza. and pizza in Washington? Super sucks. You can get it on nearly every corner in New Jersey and it's amazing, and you can get it by the slice. But here on the west coast? They didn't get the memo. Papa Murphy's seems to be a favorite, but if I'm gonna have to bake the pizza myself, I'm gonna go ahead and make my own damned pizza. Cause duh.

So I found the greatest recipe ever for pizza dough, and make a bunch of them and freeze them in separate baggies so that whenever we feel like pizza we just have to thaw out a dough and voila! Amazingness in no time at all.

The recipe is from the book "Made In Italy" by David Rocco. I highly recommend this book. So here's his pizza recipe.

2 1/2 tsps active dry yeast
1 1/2 cups lukewarm water
4 cups flour
1 tsp salt
1/2 cup white wine at room temp
2 tbsp extra virgin olive oil

stir yeast into water and let it dissolve, about 10 minutes
pour flour and salt onto smooth work surface and create a well in the middle
pour water and yeast mix into well a little at a time, using a fork to stir in more flour from the sides of the well
keep it up til the water is gone. then add in the olive oil and the wine.
knead the dough until it's smooth and a little spongy. it seems like the thing will never ever come together. but trust me, it will.
divide the dough into 6 equal parts and put a damp dish cloth over them and leave at room temp for about an hour.
Punch them down and roll them out to make the pizzas, or stick em in baggies and freeze!

For this particular pizza, I took some of my favorite things and threw them on a pizza. I just cooked up some diced sweet potatoes, chorizo (I crumbled it up), cut up some scallions and some heirloom cherry tomatoes, and topped with marscarpone. I just brushed the dough with olive oil before tossing all of the goodness right on there.

Farmer's Market BLT and Grapefruit salad- Yes yes and yes

I will never make another regular BLT again.

Recipe is all Mario Batali, here. I followed it. And loved it. I also made my own bread. Here's the bread recipe:

In a mixer, combine 1 3/4 cup hot water and 2 cups flour and start to mix. While mixing, add 2 teaspoons salt and 4 1/2 tsps yeast. Add 1/4 cup of flour at a time until you reach 4 cups. Switch to dough hook and put on high speed for 25 minutes. It will sound and look like craziness. Your mixer will dance across your countertops. Continue to do this.

Once 25 minutes is up, scrape down the sides of the bowl, cover with plastic wrap and let rise 2-3 hours, at room temp, til it triples in volume.

To shape, gently scrape the dough onto a pizza stone with corn meal sprinkled on it, or a greased pan, and tuck the edges under- it's a vague football-esque shape. ish. sprinkle the dough with flour and cover with a dish towel for an hour until it's very puffy.

Preheat oven to 400 degrees (350 if you're using a convection oven) 20 minutes prior to baking.

Bake on center shelf until golden brown, about 50 minutes. to be certain it's done, turn the loaf over and it should sound hollow and hard when thumped.

Then eat it. Hot out of the oven. because THERE IS NOTHING ON THIS EARTH BETTER THAN FRESH BAKED BREAD OUT OF THE OVEN.

For the salad, I simply cut up some chard, cut up some chunks of grapefruit, and made the dressing using some fresh mint, parsley, and cilantro, lemon juice, a little grapefruit juice, evoo and salt and pepper.

And heeeeeeeere's dinner!

Authentic Refried Beans

Yum. One of my faves is to have refried beans and eggs over tortilla chips for breakfast. or just have refried bean dip always. And here is my fave recipe:

She also has a link of hers to tell how to cook the dried pinto beans. DO THIS. You will not be sorry. It's quick, it doesn't require pre-soaking, and the result is probably the most delicious beans I've eaten ever.

So I didn't make quite as much at one time as she did and I played with the proportions a bit. I only used 3 cups of beans and froze the rest, along with the leftover cooking liquid. I used about a cup of cooking liquid, but that all depends on what kind of blender you have to puree. and instead of using safflower oil I used lard because YES PORK FLAVOR IN REFRIED BEANS YES.

So mine worked out to be:
3 cups beans
1/2 cup chopped onion
approx 1 cup of bean cooking liquid
3 tbsps lard
salt to taste

I cooked that all together, then after I got lazy about the mashing I stuck it in the blendtec. And added a little more cooking liquid for consistency. and the result? Ah-Mah-Zing.


It's what's for dinner

It was brought to my attention that I should post the food that I make along with the recipes. I tried doing something like that via Pinterest in the Dear Dinner Diary section, but posting recipes on pinterest is just not that easy. So I'm going to attempt to do a blog post for each one of the meals that I make. A lot of times, it will simply send you to the recipe I got somewhere off in the interwebs- I'm creative like that. But I can include realistic cook times and some tips and tricks that I've picked up while cooking with a baby on and a toddler helping/ under me. It's a party up in this hiz-ouse.

So, without further ado, here is tonight's dinner...

PS: does this make up for the lack of blogging I've done since getting all knocked up with number 2??

Chicken and Chorizo Paella


This recipe is Michael Symon's, here. Funny enough, He has a specific recipe for Chicken and Chorizo Paella but that is not the one I used...I saw that one later. However, this one came out delish. There should be a little less chorizo and some seafood in this one, but we don't eat seafood, so I simply left it out and upped the chorizo. This one uses saffron, which is fun and exotic and freakin expensive so I had to try it. I can't say enough how yummy this was AND how much we now have leftover which rocks for packin lunch for the hubbs. And you totally don't need a paella pan. The dutch oven works just fine. I started off using my cast iron skillet and discovered that there was no way everything would fit in there....But outside of skipping the seafood I followed all the directions as stated. And I used the chicken stock I make. And it only took an hour to come together...probably less had I not had a child on me. You will not be sorry if you make this. And I used short grain brown rice. He doesn't specify but I like brown better.


 Hazlenut Gelato
Unfortunately, I'm not sure if you can bust this one out if you don't have a fancy pants blender. But if you're doing a lot of cooking from scratch than TRUST ME you need a fancy pants blender. I use it more than once a day, the cleaning of it is simple, and it's bad ass. It can blend an Iphone. AN IPHONE. That's just awesome. I digress.

1 pint heavy cream (I think you could probably use half and half as well....)
3 1/2 tablespoons granulated sugar
1 cup raw hazelnuts
2 cups ice
pinch of salt

The Blendtec has a setting for ice cream making. I ran it 3 times because I was playing with proportions. It started to become butter, so DO NOT DO THIS. It was still yummy, but it was yummier when I tasted it after running it only twice. But for reals people. The setting is for 45 seconds. Which included chopping up the hazlenuts. So add in like 20 seconds for dumping above ingredients in blender. Outside of Italy, this was the most amazing gelato I've ever had. And let's face it...part of Italy was just the ambience...sooooo....yeah my gelato is the best ever ever.

And that was tonight's dinner.

And in case you're all like "ummmm we see the food you're making, and dessert, every night and we don't want to be fatties so no thanks" let me just say that both the hubbs and I have lose weight, and continue to lose weight while eating this stuff. Daily. We don't diet and we don't exercise (apart from running after babygirl who NEVER EVER STOPS MOVING EVER). But because we use all organic, made from scratch ingredients, we end up eating less and the food is good for us. So win win win win win.

I did NOT see that coming....(aka a "normal" birth and it's outcome)

Asher Jet arrived on March 29, 2014 at exactly 38 weeks, weighing 6 lbs 15 oz and scoring a 9 on the apgar scale. Everything was planned and scheduled- arrive at hospital at 6:45 am, head into surgery at 8:00 am, have a baby, and begin life with 2. Neat and tidy. No drama. No (visible to me) blood. No NICU (well kind of. in a twist of irony, they had no more rooms left and we were sent up to the rooms in the NICU unit. I *might* have started crying as they walked us to our room and I spotted all the kangaroo chairs and isolettes...). Everything was "normal". So why was I such a hot mess???

We're almost 11 weeks in, and the fog has finally started to clear. Life is becoming routine-ish. And I can look back on those first weeks with some clarity and hindsight and see that I was COMPLETELY unprepared for this scenerio. I spent 9 months holding my breath, waiting for the trauma to occur. for the other shoe to drop. We had a miracle kiddo at home. a 29 week survivor. a thriver. we were pushing our luck with this second baby. we would not be so lucky this time. this would be our payback for getting too greedy, wanting too much. TWO healthy kids at my age with this body's history??? we should have just been happy with 1 and left well enough alone.

and a BOY? what did we hear over and over again in the NICU. They had a phrase...weak little white boys. because boys tended to not fare as well. little girls were feisty fighters. little boys? not so much. and we were having a boy. PANIC.

and how on earth could I possibly devote my time to being in a NICU with this baby when I had a 2 1/2 year old at home. one that falls apart when I'm not around?  I know that the time I spent with babygirl made all the difference in her recovery. how could I not devote that same time to baby a? but how could I desert my babygirl?

HOW CAN I POSSIBLY MANAGE THIS?

Friends, and even hubbs, would tell me everything will be fine. This baby will stay in. the last time was a fluke. you're well-monitored. my mom understood. but I don't think even I knew how much I was panicking. until I exhaled. with this huge (to me) hungry and ready to nurse newborn with fully developed lungs and zero issues.

and so our relationship really began. because let's be honest. I was not exactly warm and fuzzy about my pregnancy. I loved him. but it was so very different from babygirl's birth. that was survivor mode. fierce mamma bear. THIS GIRL WILL LIVE AND THRIVE. we were attached from the second I peed on that stick and we still are. at 29 weeks I thought I lost her as I sat in the bathroom pouring blood and begging God for a miracle. That's a bond that I'll never have with anyone else.

so A's birth? calm, peaceful, flawless? what the hell was I supposed to do with that? I was expecting the worst for those months. and now? now what. here's this tiny little man who I tried not to get too attached to during pregnancy just in case. and now he was here. all ten tiny fingers and ten tiny toes of perfection. and I loved him. but it was a slow simmer, not a boiling over.

and so we started to build a bond. and those first weeks. those were HARD. because babygirl was having a rough transition. mommy was gone for the first time EVER. and overnight. she loooooves her nannie-eat-face, but it was not mommy and she was OVER. IT. and I just wanted to comfort her. but I have this baby. who I also love. and who needs to eat. and his cries are more urgent. and hers are a little heartbroken. and I had to choose. mom guilt doesn't begin to describe it. I was never NOT there for her. and he deserved the same. but he was fine and she is still my little miracle. and I felt really alone.

so we struggled. and her temper tantrums were epic. and mommy kept breaking down. and baby took it all in stride. I did all the things I had with babygirl- we co-sleep, I carry him everywhere (cause I make em needy and he doesn't like being put down), we nurse on demand. but I felt a little bit like a fake. an imposter. because that level of urgent love....that wasn't there. a friend suggested I might be having a bit of postpartum depression, and part of me knew she was probably right. the other part fought like hell against believing that. because I don't fail at things. I don't "have issues". I am able to handle it all. I can do it all. and do it by myself damnit. it's my MO. always has been. it is not possible that I was in need of help.

and so I continued to breakdown. cry. a lot. wonder how I was ever going to manage with 2 as joyfully as I had with 1. I knew I could handle it. I just didn't know if I could be happy doing it. I was slowly, oh so slowly, falling in love with A, but only when babygirl wasn't around to see it. late night, all night feeding sessions. moments when she was with nana or daddy. I could smother him in affection without seeing that look on her face. that look which was partly "hey lady where are my kisses and hugs" and partly just my imagination. because she could not have been happier having a life size doll to tend to, to nurse, to diaper, to hold.

I think the MMR vaccine issue started to clear the fog a bit. I really had to sit down and think about the health and well being of BOTH of my children. We could wait longer and risk baby getting measles. or we could trust that her digestive system was now grown and healthy enough to not be negatively affected by the shot. Here's that story, and she's fine. And I started to realize that having 2 wasn't going to break my love for her. But I needed to step it up for him.

My hormones finally started to let up a bit around week 6, and babygirl seemed to finally fully accept that she had company, mommy wasn't going anywhere, and life could resume almost as normal.

And I began embracing life with 2. loving on him a ton, even in front of her. appreciating all the little quirks of this tiny new man in our lives. finding I could maybe not go food shopping as often by myself with both of them (that is now a full family affair), but I could do most of the other things and enjoy them. snuggle with babygirl while he was sleeping in the moby. still have our dance parties, and play cars and castles. be patient MOST of the time. definitely not all of the time. when all God's children are screaming and crying mommy starts to lose it.

But here I am on the other side of what most likely was a bit of depression. feeling a tinge of guilt about not jumping in full force with a fierce love bomb. but knowing that our little courtship is working out quite nicely and finally appreciating the quiet, calm way he came into this world.

And his constant smiles melt me.

the FDA is once again an A-hole, or How shampoo is killing us...

It's no secret that I'm a huge proponent of making my own cosmetic/ personal hygiene stuff to avoid all the toxic garbage contained in most of these products. However, since I just added a newborn to my always active toddler, time is no longer something I have. So it came down to either continuing to make food for my family, or make my shampoo. Food won.

And thus began my quest for shampoos and conditioners that wouldn't mess with my hormones, which are already quite messy enough, thank you very much.

One might think this would be easy peasy. One would be incorrect.

For starters, any big brand of shampoo that says it's all natural is lying.

No parabens and no sulfates are good, but it's the phthalates that really eff you up. And finding anything with no phthalates is HARD.

The FDA website says that phthalates are safe. Lies. Big fattie fat lies.

The EU equivalent of the FDA says they are not. The EWG says they are not. Even the website Babycenter says they are not.

Let's address.

"What are phthalates?
Phthalates are a group of chemicals used in hundreds of products, such as toys, vinyl flooring and wall covering, detergents, lubricating oils, food packaging, pharmaceuticals, blood bags and tubing, and personal care products, such as nail polish, hair sprays, aftershave lotions, soaps, shampoos, perfumes and other fragrance preparations."  FDA Website

"FDA reviewed the safety and toxicity data for phthalates, including the CDC data from 2001, as well as the CIR conclusions based on reviews in 1985 and 2002. While the CDC report noted elevated levels of phthalates excreted by women of child-bearing age, neither this report nor the other data reviewed by FDA established an association between the use of phthalates in cosmetic products and a health risk. Based on this information, FDA determined that there wasn’t a sound, scientific basis to support taking regulatory action against cosmetics containing phthalates." (I put the emphasis on that phrase).

Oh, so the fact that the rise of infertility (male and female), reproductive diseases, thyroid/ hormonal issues, weight gain, early menopause, lack of ovulation, and early growth of breasts and pubic hair in VERY young girls... phthalates doesn't at all play a role in that? Oh good. thanks FDA.


"Under the authority of the Fair Packaging and Labeling Act (FPLA), FDA requires an ingredient declaration on cosmetic products sold at the retail level to consumers. Consumers can tell whether some products contain phthalates by reading the ingredient declaration on the labels of such products.
However, the regulations do not require the listing of the individual fragrance ingredients; therefore, the consumer will not be able to determine from the ingredient declaration if phthalates are present in a fragrance. Also, because the FPLA does not apply to products used exclusively by professionals--for example, in salons--the requirement for an ingredient declaration does not apply to these products. Based on available safety information, DEP does not pose known risks for human health as it is currently used in cosmetics and fragrances. Consumers who nevertheless do not want to purchase cosmetics containing DEP may wish to choose products that do not include "Fragrance" in the ingredient listing."

"Phthalates (pronounced "thah-lates") are chemical plasticizers that have been widely used since the 1950s to soften plastics that would otherwise be brittle and crack when bent. Because phthalates are not chemically bound to the plastics they're added to, they're continuously released into the air or food or liquid. Did you ever notice how plastic sometimes hardens over time? That's because the phthalates have leached out of it."  Babycenter: Phthalates: What you need to know

"European governments have restricted the use of phthalates in some baby products, cosmetics, and plastics designed to come into contact with food.

The U.S. Consumer Product Safety Commission (CPSC) has reviewed the same evidence viewed by the EU but felt it was incomplete and left the decision up to manufacturers, many of whom voluntarily removed phthalates from items typically mouthed by babies such as teething rings, pacifiers, nipples, and some toys. This has been a voluntary measure, however. And if you're a parent, you know that a baby doesn't distinguish between "toy" and "not toy" when it comes to putting things in his mouth."

"Toys intended to be placed in the mouth by children under three years of age and containing phthalates are prohibited throughout the European Union (EU); importing these products is also prohibited. Phthalates are toxic substances that may be found in soft PVC, a type of plastic which is also used in the manufacturing of toys."-  European Union Legislation

And over here you can read about how the Environmental Protection Agency (EPA) believes that these are toxic substances that they are performing studies on to see their cumulative effect on humans.  "EPA is concerned about phthalates because of their toxicity and the evidence of pervasive
human and environmental exposure to them. Thus, EPA intends to initiate action to address the
manufacturing, processing, distribution in commerce, and/or use of these eight phthalates"
 
But of course America, let's go ahead and keep allowing companies to not only use them, but also NOT CLEARLY IDENTIFY their usage of these products. Course, that will suck when we find out that they DO in fact cause harm, but hey sorry, look at all the money made for those companies while we were testing. We wouldn't want to miss out on that right? I mean, those 5 people that own those companies need all those billions of dollars. 
 
This link is your best bet, outside of making all of these products yourself, to find out what products are seen as health hazards. The Environmental Working Group (EWG) made a list of a LOT of different products and their ratings as far as toxicity are concerned. It's kind of astounding how many of them rate in the dangerous levels. Especially when you add up all of the products you use on a daily basis. 0-2 is low hazard, 3-6 is moderate hazard, and 7-10 is high hazard. So let's take a shampoo. Type in Pantene, and it says that there are many different kinds, and the range is from 4-8. Ok fine. So shampoo is a 4 and conditioner is a 4. Now let's add on sprays, gels, or other hair care products. But oops, don't forget about make-up, perfume, lotion.....if all of those products individually are sitting in the moderate to high hazard zone, imagine the damage when you put all of them together on a daily basis. My guess is that your insides don't like it. I know mine didn't. 
 
I find it appalling, shocking I know, that the government continually allows this crap. Their data is not up to date, they clearly have not been listening to groups like the EPA and the EWG who are finding that these are in fact harmful. They don't at all care about people, families, CHILDREN who are being exposed to more and more of these chemicals. AND WE STILL WONDER WHY OUR NATION IS SICK, FAT, and DYING. Let's see. Eff with hormones and what happens? Do you think maybe cancer? Perhaps infertility? Birth defects and abnormalities? Yeah, that sounds about right. Combine that with the crap they allow in food and we are one big science experiment. 

I'm so mad, sad, fed up with, disgusted by this crap. all of it. I shouldn't have to work this hard. NO ONE SHOULD HAVE TO WORK THIS HARD to keep themselves, their families, and their children healthy. It shouldn't cost this much. THERE SHOULDN'T BE ENTIRE BUILDINGS DEDICATED TO WIPING OUT CHILDHOOD CANCERS!!!!! There should not ever be that many sick kiddos. Ever. It's heartbreaking. And it's happening in a country that has enough knowledge, and money, to know better. To DO better. I know people are all up in arms about parents deciding not to vaccinate their kids. And I get it. I do. It's a tough decision and a tough conversation. BUT WHY AREN'T PEOPLE UP IN ARMS ABOUT THE RISE OF CANCERS IN CHILDREN!?!?! Measles have nothing on leukemia. And yet we act as though it's just the luck of the draw, the kids that die from cancers. That's just not the case. 

It's in our air, our food supply, our water supply, our homes, our decor, our air fresheners, our cleaning products, our hygiene products, our beauty supplies, our toys. It's pervasive, and it becomes more so every. single. day. 
 
Let's let our government know that we're not ok with being poisoned. I sure as hell will.

Parenting is hard y'all...constipation, vaccinations, and a newborn

Yup. It's been too long.

After pregnancy was done kicking my ass, we brought home a baby boy. Under VERY different circumstances than babygirl. Little man was born at exactly 38 weeks via planned c-section, weighing 6 lbs 15 oz and 19.7 inches long. They were able to totally follow my birth plan, including putting him directly on me after pulling him out. He was held there by daddy and a nurse since I was trying my hardest not to puke everywhere. (That came the rest of the day, as I held and nursed him while simultaneously puking into a measuring cup. FAAAAAANtastic.) And we left the hospital after 2 1/2 days.


He is the mini Serbian that's for sure. Spitting image of daddy, except for the butt chin.

He's been surprisingly easy. He lets anybody hold him (although he fusses if he's put down, but since I'm all attachment parenting that works for me), he sleeps all the time, and was an excellent nurser right from the get go. I SOOOOO get how lucky I am. Babygirl was (and still is) high needs, so having a baby that's easy going is completely new, and welcome, territory.



And here's where the hard comes in. She LOVES "baby Asher". Wants to hold him everyday, wants to kiss and hug and play with him. Talks about him a lot. She does NOT love that mommy is occupied with him. She gave me the cold shoulder in the hospital and didn't really unthaw until we were home for a day or two. EPIC. MELTDOWN. We did our time-in (I take her into a different room and sit with her as she melts down and wait for her to calm down and talk to me....it's amazing how well this works for her). She screamed for about 20 minutes. Then she looked at me, with just the saddest eyes that I will NEVER forget, she screamed, and then she crumpled. As did I. We both started sobbing, she threw herself into my lap while I just stroked her hair and told her that I know and I'm sorry that I wasn't spending as much time with just her, and we fell asleep. And she's been good with me ever since.

BUT.

She started holding in her poop. I don't know if it's because she remembers how much it hurt when she got all stopped up right before baby came and now she's afraid to poop, or if it's just that toddler thing where new baby affects potty. But girlfriend strains to hold it in. Among prune juice, flaxseed oil, smoothies with spinach and yogurt and berries and chia seeds and coconut oil, apples, pears, figs, cherry tomatoes, olives.....this stubborn little thing STILL HOLDS IT. And then we have to start to coach and cheer her on when it's obvious she's trying to hold it. "Push em out, shove em out, waaaaay out!". 

Yes, we have actually said that. In cheerleading fashion.

Then, she decided that she also would start screaming in pain while I tried to brush her teeth. Prior to baby, this was one of her favorite things to do. She even had a "practice" toothbrush she carried around with her so she could brush them all the time.

And the tantrums. Everything is now asked for with a whine and a whimper. Cause baby gets attention when he cries so hey why not? UGH. Her pediatrician said it was fine and he would be concerned if she weren't affected by his arrival. But I just CAN. NOT. Nana is leaving today and hubbs went back to work today, and I am just tired. I'm hoping that once we get into some semblance of normal, she'll start to get back to her old self. Until then she will continue to bust out phrases like "kill me now" like she did this morning (she *may* have heard mommy utter this under her breath while dealing with the brushing of the teeth).

And on top of the fun that never ends, there's a measles outbreak in Seattle. Frickin measles. If you read my blog, you may know how I feel about vaccinations. I don't think they're all bad, but I DO think that they give WAY too many at one time and at WAY too early an age, especially for someone that was born premature and is too tiny and may have digestive system issues, putting her at risk for vaccine injury. My gut instinct was to keep her from getting most vaccines until she was at least of school age, and to avoid some of them altogether (she will NEVER get the flu vaccine, and neither will anyone else in my family). I did 2 months of nonstop research while she was in the NICU, reading all the good, the bad and the ugly. I read several books, including my favorite, the Dr. Sears Book on vaccines. But since she doesn't go to daycare or school I thought I could avoid making this decision until she was 5. And then I got pregnant.

At little man's first pedi appointment, our doc, who is very vocal about which vaccines he thinks are garbage and which he feels strongly you should get, and who is also very pro alternative scheduling, asked if we were going to get her the MMR vaccine since measles are in the area. And hubbs and I have had a lot of conversations, all tear soaked by me, about the issue. We called my in laws, one was a surgeon in Serbia and now does alternative medicine therapy, and one was a pediatrician, and asked their opinion. I read more. I prayed. I cried. I prayed some more. I felt guilty about the whole "herd immunity" thing....and then I felt guilty for feeling guilty because my daughter could very well be one of the kiddos that had a too sensitive immune system to handle a vaccine like MMR. Because regardless of the debunked scientist regarding the autism claim, there are still PLENTY of parents who now have children with unalterable health issues due to the MMR vaccine. Seizures, brain injury, digestive health issues, etc. And I was NOT about to jeopardize her health because of someone else's child. Her health is number one on my list.

Except now we have a newborn as well. A newborn who I would prefer did not catch the measles. Well crap. So what's worse? I'm not concerned about babygirl getting the measles because she's never even had a fever, so I know she would be ok, although it would be unpleasant. But I'm pretty sure a newborn with measles is not a situation we want.

So I cried some more. A lot. Still crying actually. And we decided to do it. To vaccinate her. She's 2 1/2, she's been really healthy, and not only are the measles here, but we're flying to Jersey over Memorial Day weekend and they hit on the east coast too.

So nana and I took her today. She did not even flinch when she got the shot. No crying. Nothing. Just calmly ripped the band aid off of her leg and resumed playing with the dolls in the room. And so far, she still seems unaffected by it. My stomach is in knots, but I'm praying everything will be just fine.

These decisions. These parenting moments. These bumps in the road that were not expected. These are all really really hard. And torturing me. I'm an extremely visual person, and I like to jump to catastrophe (in my head). For 2 weeks, all I could think was that we would lose our sweet, happy, feisty, stubborn as hell babygirl to a vaccine that I didn't want her to get in the first place. Luckily, it looks like I was all drama for no reason. But it tore me up. And it's only gonna get worse. Because she'll eventually be a teenager and I can dream up all sorts of awful scenerios that I can't control and LOSE MY FREAKIN MIND on a daily basis.

Awesome.

Maybe these decisions will be a bit easier with little man. Less drama all around for him.

But probably not. Once a drama queen and all that....

Another Hair Post!

Well, it's been a while. This pregnancy with a toddler who no longer naps is not allowing me to get much research or writing done.

I did, however, find time to FINALLY make a detangler for my hair. I love the homemade shampoo, but was finding that my hair was constantly knotty. I could brush it, and 2 seconds later it was all tangles again. Not fun. So I did a little experimenting. I found a few that looked interesting that used marshmallow root, but finding marshmallow root was a bit of a challenge and since I have the patience of a toddler, ordering it online wasn't an option because I wanted to make it RIGHT NOW.

So, this is the recipe I came up with. And I have to be honest I'm quite surprised at how well it works. As a reminder, my shampoo recipe is:

1 cup hot water, steep 6 chamomile tea bags for 20 minutes
1 tbsp honey
1 1/2 tbsps coconut milk
1/4 cup castille soap
5 -10 drops sage (for quick, thick hair growth)-  optional

So, for the detangler/ conditioner, I took a flax seed recipe I found and added a few of my own things, and it's working like a charm! Here it is:

  2 cups water
on low heat, add the contents of 2 bags of Nettle tea and 1/4 cup of flax seed. keep the heat on until it thickens and forms a gel - the longer it heats the thicker it gets.
turn off heat and let it cool. Then strain it through either pantyhose or a cheese cloth. Put it in a spray bottle or container and add 2 tbsps apple cider vinegar and any essential oil drops you would like for a nice scent.
 
I'm finding that my spray bottles are too wimpy to handle the thickness of the gel. You can water it down or just put it in a different container and not spray it. I use this as a conditioner in the shower. Not sure what the outcome would be if you sprayed it on wet hair and just left it in. But works like a charm for me!

If all these diets work, why is everyone still obese?

Seriously America? Seriously?

I thought we were getting smarter. I thought the food movement was really taking hold and that we were starting to see some real change. Perhaps I was delusional.

Because here I sit, once again, HORRIFIED at the so called professionals who are doling out diet and health advice, taking advantage of everyone's New Years' Resolutions to get skinny. UGH.

SO. MUCH. BULLSHIT.

It started slowly. In crept the Eggbeaters commercials...you could save 50 calories by ingesting this chemically altered semblance of an egg! It doesn't matter that the egg is pretty much the PERFECT FOOD (especially cage free organic eggs). It doesn't matter that all those reports that eggs were too high in cholesterol have been shot down. It doesn't matter that you will get zero healthy benefits, and all the lovely side effects of eating hormone and antibiotic filled, chemically altered nonsense. But you my friend just saved 50 WHOLE CALORIES so HALLELUJAH!

Then of course, there are the 75 times a day, how many celebrities can we get up in here commercials for Nutrisystem, Jenny Craig, Weight Watchers. Eat our craptastic, chemical meals, feel like you're dying on the inside, and maybe lose some weight! Look, all these famous people lost weight this way....it had nothing at all to do with their personal trainers, personal chefs, or the fact that they get paid millions to look good.....

Then I read the lasted issue of Glamour. A certified nutritionist (NUTRITION!?!?!) suggested that since sugar is so bad for you, that everyone should switch to diet soda. Ummmm.....what rock did you just crawl out from under?  The studies have been everywhere. The effects of artificial sweeteners, the damage it causes, the fact that it makes you GAIN WEIGHT. Riiiiiight. Let's all follow this advice.

And then, the dagger to my heart. The Chew. SOLD. OUT. I'm sure that has a lot more to do with the people that run the network than it does with the hosts of the show, but that one upset me more than anything else. They've decided to run the competition for who will be the next weight watchers chef.   I was already disappointed that they've taken on this "cans" thing, saying you don't need fresh ingredients, just use the shit you find in cans. No. Thank. You. And then to add insult to injury. The competition began with 2 chefs who sucked the joy out of the food they were cooking. And the piece de resistance? The rep from WW said "And you could substitute the parmesan cheese for a fat free cheese". Scuse me what now!?!?! Mario Batali just died a thousand deaths. Michael Symon bowed his head in shame. Even Daphne Oz was shaking her head. These people know better.

Should we all start eating "I can't believe it's not butter" too? Why don't we suck down some transfats while we're at it? Maybe they can bring back those fat free O'lean potato chips. You know the ones. That cause anal leakage. Right there on the package, it says it. ANAL. LEAKAGE.

Have we not learned that if the food was created in a lab then *perhaps* it's not the best choice for our bodies? Have we not seen the number of cancer patients in this country sky rocket? The number of kids with diseases, behavior issues, food allergies, etc etc etc. The number of people with diabetes?

I'm almost too tired of it all to be pissed. Just when people start to speak truth about our food, where it comes from, what it does to our bodies, some big stupid corporation comes in with crap tons of money and tries to wipe out the evidence. Simply to line their pockets. Why is this nation so greedy? Why don't they have these issues in other countries? How is it that ours is the ONLY ONE that doesn't ban this garbage? And why do some of the same companies make food for these other countries that do not contain this crap???

But I'm digressing. Right now, I'm aiming it all at the diet industry. The multi-billion dollar industry. What many people don't seem to understand is that these are MONEY MAKING MACHINES. They are designed to FAIL. Because if they worked, they would put themselves out of business. If they worked, there would not be an obesity epidemic. If they worked, you would not constantly feel guilty about eating, about enjoying your food, about enjoying your LIFE without a little message hovering over your shoulder, saying you're not good enough, not thin enough.

Points don't allow you to listen to what your body really needs to eat. Packaged meals full of chemicals don't give you enough nutrients to stay healthy. The food they push is not filling enough, nor TASTY enough, to keep you satisfied. 4 bites of REAL pasta with REAL butter and REAL cheese? That will kill that craving for mac and cheese more than eating anything else. And, if you buy the right ingredients, it's actually GOOD FOR YOU! Butter made from grass fed cows actually is good for you. Ever wonder why so many kids today need an orthodontist? Lack of Vitamin K in our diets. And no wonder. It comes from eating organ meats (liver, etc) and full fat soft cheeses. All because some idiots in the 80's and 90's tried to convince us that eating fat made us fat. And suddenly all of our food became LITE.

Let's once again look to our friends from Europe. They've been around a looooong time. And their food? Is GOOD. EXCELLENT. INCREDIBLE. THE REASON WE GO TO THERE. And without fail, don't you ask yourself how it is that everyone there seems to be in really good shape. And there's not a gym in site? These folks know how to eat. They take their time (3 hours minimum for a good dinner). They savor their food. They use real ingredients. They don't feel guilty.

The point is. REAL. FOOD.  Eat it. feel better. look better. cure your body using food not drugs. eat food that only has a few ingredients, all of them recognizable. if it's not something you'd cook with, don't eat it. Make as much food as you can yourself. and not with those garbage shortcuts in a package. I'm looking at you, bread dough that doesn't need any rise time.....

seriously dude, when did we get too lazy to mix together 3 extra ingredients in order to make pancakes? Bisquick is not necessary!

Retrain our brains. whole milk. full fat cheese. eggs. extra virgin olive oil. full fat greek yogurt with honey and fresh fruit. (all organic, obvs). EAT THESE THINGS. savor them. Pasta with just one ingredient (semolina flour). top it with all the fresh parm & grass fed butter you want. Do it. Now.

Hell hath no fury like 3 weeks of "Vacation"...

So we were gone for a while. A long while. And we've learned some lessons. I'll share them here so you can avoid them at all costs. You're welcome.

FOR THE LOVE OF ALL THINGS HOLY, DO NOT DRIVE TO SOUTHERN CALIFORNIA FROM SEATTLE.

I mean, you can. While 20 weeks pregnant. With a 2 year old. But I would not recommend this. It sounds like fun at first. You've borrowed a portable DVD player (LIFE SAVING DEVICE), you've made some yummy food for the road, you're staying over 2 nights in hotels to break up the trip appropriately. Seems like all should be good, right? Until. You decide that if you eat another homemade, organic peanut butter and jelly sandwich you might just lose your ever loving mind. So you grab some food. Which is, of course, garbage- even if you go to those few places that serve hormone free burgers and chicken. And then. You begin to experience the wrath of the toddler. The toddler who you forgot to change so she's soaked. SOAKED. And who was fine in the car, but now that you've decided to let her run around and get out some energy has suddenly turned into a screaming, whirling ball of angry. And forget trying to put her back into said car. Everyone around you will assume you're kidnapping her. Don't worry, the screaming subsides eventually. Just put on the Muppets soundtrack. But only the Mah Na Mah Na song. For the 367th time.

Also. Keep in mind you're driving with a preggo. So you may have just passed all those slow cars on that one lane highway through the mountains. But it doesn't matter. Because approximately every 20 minutes, said preggo WILL make you pull over so she can pee. Complain all you want. Just remember, driver, that YOU HAVE DONE THIS TO HER.

Congratulations! You have finally made it to San Diego! No one was stabbed so you consider this a win. And tomorrow night, Nana flies in to help wrangle the munchkin while daddy is at work all day long every day. Because this wasn't so much a vacation as a work trip that wifey and babygirl refused to let hubbs take by himself. And since preggo wifey is all high risk and can't fly, driving the total of 3,600 miles is a necessary evil.

This week goes by fairly smoothly. Nana is a HUMONGOUS help and babygirl only has a few meltdowns. Mainly in Disneyland, when we evil grown ups dared to try to cover up her pretty Ariel dress with a sweatshirt when the temp plummeted. Imagine if you were to dismember someone with a dull butter knife. THAT level of screaming and kicking. In the happiest place on earth.

Adorable. First thing in the morning, meeting the princesses. Precious.

End of the night. DAGGERS. Completely. Over. It.


We had many adventures, and then Nana had to leave. BIG MISTAKE. Tired preggo mamma and toddler replaced by a different, unhappy child that mamma didn't recognize in tiny hotel room with no vehicle and no healthy food options equals unhappy mess that really just wants to get the hell home already.  All the Peaceful Parenting books I read flew out the window as I found myself yelling 45 times a day "DON'T TOUCH IT!!!", "STOP SCREAMING!!" (always helpful when screamed), "STOP RIPPING THE BIBLE!!"

Finally, we are free to go. THANK. GOD. So we decide to take 4 days to drive home. This seems ridiculous in so many different ways, but when will we ever drive up the California coast back to Seattle again? Let's just do it. Back in the car. This time, zero amounts of homemade food since our hotel for the last week didn't even have a refrigerator. All crap, all the time. Stopped up, cranky, tired, homesick car load for  4 days. WOOHOO. Oh yeah and Thanksgiving is just a few days away, so let's menu plan on the drive home and order a turkey over the phone. The very last one left at our fave Bill the Butcher. A 15 pound turkey for 3 people??? SUUUUUURE. It's only $92. that is totally justifiable right? Hubbs? Less than pleased. Whatevs. We had turkey.

And in the final phase of ALL IS NOT FAIR FOR THE PREGGO ON A ROAD TRIP. Napa. We drove through, and stopped at, several wineries. In Napa. AND I. CAN'T. DRINK. Perfect.

Outside a gorgeous winery, where I got to watch hubbs sample some AH-MAAAAZING wines. UNFAIR.


So we get home. Sleeping in our own bed is heaven. Eating our non-processed homemade food again is glorious. Trying to get back into our routine? HELL. Apparently, 3 weeks gone equals one very very clingy, tantrum-y toddler. Who LITERALLY clung to me 24 hours a day for a full 2 weeks. Even while sleeping, her little arms were death gripped around my neck as she snored in my face. Which was adorable. Except have you ever tried sleeping in the same position, while pregnant and having to pee every 2 hours, for the entire night? Not. Pleasant. Naptimes were back to only sleeping with mamma- something we STILL have not been able to fix. And from the day after Thanksgiving and lasting an ENTIRE WEEK- we got hit with a cough and cold. It was mild. But. Our energizer bunny of a babygirl did not MOVE off of my lap for that entire week. I've never seen her sit still for so long. And of course that meant that every time I needed to move- to get water or food, to pee, to just GET UP, she freaked out and screamed, and I ended up having to wear her. which is SUUUUPER pleasant with my protruding belly. And getting prepped for Christmas? HA! Christmas cards will most likely end up being Happy New Years cards, decorations didn't go up until 2 weeks after Thanksgiving, and I'm still not sure what I'm cooking. And oh yeah we have to mail out all of our loved ones' Christmas gifts so maybe I should have figured that out weeks ago......

The shining light on this whole experience, besides of course getting to take babygirl to Disneyland which I've been BEGGING the hubbs to do for about a year now. We know, without a shadow of a doubt, that our organic, non-processed food lifestyle has a HUGE impact on our kiddo, and us. It took 2 weeks to get all that garbage out of our systems again and start having regular poops and attitudes. But I finally got my sweet natured, happy, helpful babygirl back! I was a bit worried she might have just entered that terrible phase and I would be SOL for Baby A's arrival. But nope. It was just all the junk in her system.

So I'll continue reading all the studies on behavioral issues in kiddos connected with high fructose corn syrup, food dyes and additives, and processed foods. But I don't really need to. I got to live it for a total of 5 weeks. And now? I don't care how tired I am. I don't care how difficult it will be with 2 kids. I will be cooking from scratch almost all of our meals from here on out. (I suppose I'll give myself a break sometimes and we'll go out to a trusted restaurant occasionally). But I can guarantee that that will be astronomically easier than dealing with a crazo toddler and an infant. 

It might seem like asking a lot from already tired, stressed out mammas. And trust me, I GET IT. But. If you're finding some behaviors from your kiddos a bit unsavory, just give this whole organic thing, and as much non-processed food as possible, a try for a few weeks. If it is processed, just ensure it doesn't have any artificial dyes and as few ingredients as possible, hopefully all ones you can pronounce. I SWEAR ON MY LIFE you will see a difference.

It's nice to have babygirl back. I'm gonna keep it that way.

A tangle of arms and legs...

So another mommy post. I might touch on just HOW ANNOYED I am that it looks like WA voted against labeling GMO's, but if I let myself really go there it would consist of mainly curses and just how ignorant Americans are willing to remain while we all get sicker and sicker because of our food system.

I digress.

I'll be in San Diego for basically the rest of the month of November and so this will be my last post for a while. I figured I'd end on a happy sappy note. Not something people are used to from me, but too bad. Here it is.

We were all snuggled in bed the other night, because YES WE STILL CO-SLEEP. DEAL WITH IT. Oh hey there I am.....

anyway, babygirl has this habit of trying to sneak back into my womb by any means possible. She reserves it mostly for bedtime and upon entering a new place for the first 10 minutes. Typically, as I'm all sorts of pregnant and sweaty, I try to push her off onto daddy, or let her know that the people in the room are not going to kidnap and eat her. However, on this particular night, I realized how much I'm going to miss these moments when she's no longer so willing to cuddle. When she no longer needs me for her warm up period before interacting with others. How I'm gonna miss the smell of her sweaty little bedhead, or how she randomly grins in her sleep. Or shouts out "DOG. WOOF" with her eyes still closed when the neighborhood dogs give their 3 am concert.

We recently moved her crib into our bedroom and removed the front portion of it to encourage her to sleep in her big girl bed. Which she used maybe once for about an hour. Daddy thought, and I kinda sorta agreed that before baby #2 makes an appearance she should get used to sleeping in her own bed, as having all 4 of us in bed might be a bit dangerous. Someone has a habit of punching and/or kicking us in the face while we sleep.

But, I'm not ready. Not to mention babygirl is definitely not ready- she still suffers from some pretty traumatic night terrors which are heartbreaking. I'm not ready to not wake up to her face on mine, breathing on me and ready to pounce. or not have her, inch by inch, make her way into my armpit in her sleep. I'm not ready to throw her baby-ness completely out simply to make way for the new baby.

And so, I've decided. I'm not gonna. Yeah yeah yeah there are a ton of differing opinions on this, but honestly, when have I ever really cared about anyone else's opinion? This child is so so excited to take her babies and nurse them, rock them, put them to bed, carry them around with her. I want her to hold onto that, and love on baby a ton. But. If I start stripping away all of her comforts, all of the things she's come to rely on to get her through the night, literally- I have a sneaking suspicion she's not gonna think that new baby is so cute. She's going to try to sell him. She's thrifty that way.

And I gotta be honest. The thought of all 4 of us snuggled up in bed? That sounds like heaven to me. Not when they're teenagers. Obviously. But now, when they're small and cuddly and their morning breath isn't bad and they still can't completely pronounce the 2nd syllable of any word....in the time that feels like an eternity during whiny time and an instant at the same time. While they're still my babies. I want a family bed. There I said it.

But what about you and your husband? How will you ever have sex?

People please. I'm pregnant. Clearly this has not been a challenge for us.

Do I think this is going to hinder her ability to ever sleep on her own?

Nope. When she's ready, she'll know that she's safe. and that nighttime isn't scary. If I decided to just go ahead and throw her in her own bed or own room now when she's not ready I think there's a much better chance that she'll never be ok with sleeping. And that's just a bummer cause sleep is awesome.

But your hubbs hates it, right?

No. Does he sometimes miss just cuddling with me at night? Of course. Would he trade in all the snuggles he gets at night, especially after working long hours and not getting to see her all day long? Not for anything. The sweetest sight is when I wake up and she's all nestled up in his armpit, both snoring away. Serious. Melt.

There is nothing like waking up in a tiny tangle of limbs and bedhead. It reminds me how blessed I am. And how granola I've become. It also reminds me that no matter how much she tries to imitate being a tiny little adult, she's still my baby at heart, and I'm gonna keep it that way for as long as I can.
